I had a friend coming to visit. Just before she left to come over she told me she was on diet, cutting out all gluten, high fructose corn sugar, fried, and processed food, dairy, and alcohol. I saw an empty cookie jar and an opportunity for a challenge! Challenge accepted and expectations surpassed!!!

1/3 cup dried apricots
1/3 cup goji berries
1/2 cup almonds
3/4 cup shredded coconut
2 egg whites
1 tsp vanilla extract
Put apricots and goji berries into the food processor on high until it appears to be a mash.
Process almonds on high until they are a course pulp.
With a hand mixer. Mix egg whites on high until you have stiff peaks.
Add vanilla extract and whip on low for 10 seconds. Gently fold in the dry ingredients until all are well incorporated. Use a spoon mixture into balls. Place on a greased cookie sheet or parchment paper. Bake at 350 for 20 minutes or until golden brown.
Allow to cool and enjoy these SUPER food COOKIES
