I served the string bean carbonara with a side of baked chicken legs for a low carb and high protein meal.

This recipe for string bean carbonara came out of necessity- I didn’t have all the ingredients of the original recipe so I improvised. The result was phenomenal! Don’t give up on a potentially nutritious and satisfying meal because you don’t feel like going to the store. Improvise with what you have and you might just discover something great!

Organic Ingredients:

  • 1 lb string beans, rinsed with ends cut
  • 3 tbsp olive oil
  • 1 tbsp butter
  • 1 large garlic clove, diced
  • 2 green onions. Chopped (greens separated from whites)
  • 5 slices prosciutto, diced
  • 3/4 cup heavy cream
  • 2 egg yolks
  • Shredded Raw Cheese to top (optional)

Prepare green beans and rinse. Lightly steam- just enough to brighten color but allow the beans to maintain their firm crispness. Set aside.

In a large saucepan melt butter and oil. Add garlic and whites of onion. Sauté for 4 minutes. Add chopped prosciutto and heavy cream. Allow the flavors to marry at a slight simmer for 5 minutes, stirring frequently. Remove from heat. In a large bowl, fold the sauce in with the string beans and egg yolk. ensure that the beans are sufficiently coated with all ingredients. Return mixture to saucepan and cook covered and stirring occasionally on medium heat for an additional 5-10 minutes (depending on how soft you want your beans, for the most nutrients do not overcook to limpness).
