I had great success making two types of no-bake chewy bars: lemon millet and coconut. So I decided to tackle a new flavor. And what flavor combo is better than pb and chocolate chip?

I love the no-bake concept! So easy to make, the food maintains its nutrients, and is ready in minutes.  These would work perfectly as a snack for school lunches.  Since there is no need to turn on the oven, these chewy bars are also a great recipe to allow your children to help you make.

Combine the following organic ingredients in a food processor:

1 tbsp raw unrefined coconut oil
3 tbsp peanut butter (or any nut butter)
1/4 cup raw pecans or nut of your choice
1/4 cup of raw sunflower seeds
12 dried apricots
1 tbsp chocolate powder peanut butter
1 tbsp coconut sugar

When all ingredients are incorporated fold in 1 tbsp of chocolate chips

Spread mixture onto parchment paper and smooth to form a rectangle.

Freeze for 15 minutes. Take out of freezer, cut into 1 inch by 4 inch strips. These bars will keep in a fridge for at least a week. Enjoy!!
