Lemon bars anyone? I love lemon and I wanted to make another no-bake bar for my girls for an after-school snack, so I thought that this lemon flavored bar was the perfect idea. I played with the ingredients and proportions and this is the finished product, hope you enjoy the recipe as much as we have.
10 dried apricots (pitted dried dates can be substituted)
1/2 cup raw Cashews
2 tbsp coconut crystals (raw honey can be used instead)
1/4 cup coconut oil
3 tbsp millet
2 tbsp coconut manna (coconut butter)
Juice of 1 lemon, can grate lemon zest for added flavor
1/2 teaspoon lemon extract
2 tbsp coconut flakes
Blend all ingredients in food processor together until well incorporated.
Spread mixture onto parchment paper. Fold paper over top and smooth down to form a rectangle shape with batter.
Allow to freeze for 30 minutes to setup.
Take out of freezer and allow to sit out for a minute before cutting bars.
Cut up and serve. Should make about 8 (1′ x 5′ )bars.
Eating healthy is a choice and it can be quite delicious and it literally takes 5 minutes to make these.
