I love making my own healthier version of products that I enjoy. Lara Bars have a great coconut cream bar but they are less expensive to make at home and a fun simple kitchen creation to make with the kiddos.
These bars are no-bake and setup in the freezer and make a great snack for school lunches, or before or after school. They are gluten-free, raw, and packed with protein and nutrients.
1/4 cup raw cashews
1/4 cup raw almonds
6 dried apricots (dates can be substituted)
2 tbsp honey (or coconut crystals)
1/2 cup unsweetened coconut flakes
1/4 cup unrefined coconut oil
Blend together all ingredients in food processor.
Spread mixture onto parchment paper and smooth to form a rectangle, Freeze for 15 minutes.
Let bars sit out for a few minutes before cutting, to soften.
Play with ingredients, you could add in peanut butter, jelly, chocolate chips, your favorite cereal or maple syrup as a sweetener, have fun and make it yummy.
