Fall is in the air! It is my favorite season. I love all the fall activities, especially apple picking. After coming home with 20 lbs of apples I needed to get creative with the preparation. If you love apple pie but want it a little fresher, more decorative, less sugar, and healthier overall, give this a try.  Easy Peasy!

Core an organic apple so that it creates a little cup. Carefully removing the seeds but not poking a hole through the bottom. Fill the center with granola and a splash of milk or coconut milk (optional) to help it soften up. Add berries if you wish (I love goji or golden berries in my granola). Top off with a dash of cinnamon.

Bake apple for 15 minutes at 350 degrees. Depending on the apple girth you may want it in there for more of less time.

Be careful when removing the apple from the oven as there may be some hot liquid not yet absorbed by the granola.

Serve alone or with ice cream or whipped cream (I love organic vanilla bean). Enjoy this beautiful fall treat!
