coconut curry meatballs

Organic ground chicken was on sale this week, so I was excited to make something different. I made these delightful meatballs for dinner and they paired nicely with a side of fresh picked string bean carbonara (made vegetarian style).

Organic ingredients:
1 lb ground chicken
1 cup shredded coconut
1 tsp Himalayan sea salt
1/2 tsp black pepper
1/2 tbsp curry powder

Preheat oven to 350.
Mix all ingredients together until well incorporated. Form balls and set on baking sheet. Bake on an ungreased baking sheet for 20 minutes or until cooked all the way through. If you want a brown, crunchy exterior, try pan frying them in a mix if melted coconut oil and butter. These freeze well after pan frying.

Serve as an appetizer on toothpicks, as the protein in an entree with hot sauce, or add to a curry or coconut soup. Bon appetite!
